Last week I baked my very first vegan cake and it was delicious! It’s a really simple one, just 6 ingredients, it’s light (guilt-free) and soft…I’m sharing the recipes of the two versions I baked: orange and the one I baked yesterday, coffee.
You will need:
- 300 gr flour
- 100 gr sugar
- 100 gr seed oil
- 150 gr water
- the juice of 1 orange+grated peel
- 1 tsp of baking powder
- confectioners sugar (optional)
Preheat the oven to 180°. In a large bowl, beat together oil+water. Add filtered orange juice and grated peel, flour, sugar and baking powder and beat until smooth. Pour batter in a bakery paper prepared pan and bake for 40 minutes. Spread confectioners sugar et voila!
For the coffee version, just replace the juice of one orange and the grated peel with a small cup of espresso.
